Tofu Scramble


1/4 pound of meat has 17 grams of fat (SATURATED) 20 grams of protein and 77 mg of cholesterol (which you should never consume). However, a scramble tofu like mine that is a full breakfast, has only 8 grams of fat (and 1 gram only is saturated), ZERO cholesterol, and 31 grams of protein! Where do I prefer to get my protein? Obviously tofu a thousand times before eggs or meat! I leave the recipe for this delicious substitute to the "scrambled egg".

Ingredients:
  • 1 package of Mori-Nu tofu extra firm
  • 1/4 cup cooked spinach
  • 1/4 cup caramelized onions
  • 2 medium mushrooms in pieces
  • paprika, turmeric, garlic salt, oregano


Instructions:

Leave the tofu draining the night before (you take it out of the package and place it on napkins or paper towel with another dish and a heavy object on top so that throughout the night it releases the water, all this inside the fridge).
You cut it into cubes the size you see in the photo. You place it in the pan and season with turmeric, paprika and garlic salt. You leave it cooking, turning it around for 10 minutes so that the pieces are separated, season well, and add the other ingredients such as caramelized onions, mushrooms and spinach. If you have and you like the Nutritional Yeast, you can add it at the end for more flavor.
